Easy Winter Roasted Vegetables


Only recently have I discovered how wonderful winter roasted vegetables are to eat!

Winter Roasted Vegetables
Parsnips (from CSA)
Beets (from CSA)
Potatoes
Onion
Garlic (from CSA)
Sweet Potatos

Cut vegetables, coat with olive oil and a little salt. Bake 350 F for 45-60 minutes. Enjoy.

  1. My mother in law made a dish like this for dinner awhile ago. Yes, It was incredible! Love the addition of the beets. I bet those were delicious!

  2. It really is so simple and so delicious. Yes, the beets this year have been so sweet! We have another bunch in the refrigerator that I'm contemplating how to use!
